Mathew Paine is currently the Director of Human Resources at International Convention Centre Sydney (ICC Sydney). Mathew is a HR practitioner with over 16 years of senior Human Resource Management experience within the private and not for profit sector in both Australia and the UK. As ICC Sydney’s Chief Human Resource Officer, Mathew is helping to create a world-class HR department at ICC Sydney, attracting and developing the best talent and building a culture of engagement, agility and innovation. Under Mathew’s leadership, ICC Sydney has instituted best practice and industry leading human resources practices.

Mathew earned a Masters Degree in Strategic Human Resource Management from East London University and a Masters Degree in Labour Law & Relations from Sydney University. He is accredited as a Chartered Member of the Chartered Institute of Personnel and Development (CIPD, U.K) and a Certified Professional of the Australian Human Resources Institute (AHRI, Australia). Setting up own wine tour business

After working in the IT industry for 15 years Richard fancied a career change. With his love of travel he decided to complete a guiding course externally with TAFE SA which could fit around his work and life commitments.

“As part of the course I was required to plan and then run a real tour. I took five people on a wine tour in the McLaren Vale. This was the moment I realised that guiding is what I really wanted to do.”

Jobs in travel and tourism are by nature found wherever tourists want to go. This includes major cities and attractions, as well as on modes of transport needed to take tourists to these destinations. This means there are jobs available in travel and tourism throughout South Australia and all over the world, in famous cities as well as on tours or cruises.

 The Restaurant and Catering Industry Association of Australia (Provider number 6868) is a Registered Training Organisation (RTO) and as such is able to deliver nationally recognised certificate level training and industry short courses.

We help members, restaurant, café and catering organisation owners and their employees with learning and development opportunities that enhance capability, competency and ultimately competitive differentiation.

Competitively priced regulatory and professional development courses are available across multiple states and in a variety of delivery methods:

Apprenticeships and Traineeships in New South Wales

 NEW: FRONT OF HOUSE APPRENTICESHIP IN NSW (SIT30713)

To achieve a SIT30713 Certificate III in Hospitality, 20 units must be completed:

  • 7 core units
  • 2 compulsory elective units
  • 11 elective units

There are three specialisations to choose from:

  1. Waiter with Sommelier and Barista specialisation
  2. Café Dining with Barista and Waiter specialisation
  3. Bar Operations with Multi-Skilled specialisation

The expected duration is 24 months

Apprentice Cook

 To achieve a SIT30813 Certificate III in Commercial Cookery, 25 units must be completed:

  • 22 core units
  • 3 elective units

The expected duration is 36 months

Certificate IV in Hospitality – Traineeship

To achieve a SIT40313 Certificate IV in Hospitality, 21 units must be completed:

  • 9 core units
  • 12 elective units

The expected duration is 30 months

Further training

As and when government funded training becomes available Restaurant and Catering Industry Association of Australia (Provider number 6868) extends subsidised places to members and their employees, eligibility criteria applies.

The recent additions of “On Line” course capability provides a great opportunity for regional and metro members to up skill and keep abreast of industry developments in a cost and time effective manner.

Through the Doing Business Better program we also run a number of informal educational seminars across the country covering topical and on-trend areas of interest to our members.  Presentations and interactive sessions range from key trends influencing food, wine, service and fit outs through to social media and consumer activation strategies and innovations.

 Enhancing your capability and competitive differentiation

To ensure the courses and programs offered remain relevant, current and of the highest standard we continually assess and work with our selected trainers to refresh their skills and bring vibrancy to the program.
