Apprentice Skills Pathways

Let us help ignite your career

Apply to be part of the Skills Pathways Program and we’ll find the right apprenticeship and training for you. We’ll match you with the right restaurant and registered training organisation. Importantly we’ll provide on-going support and a Skills Passport to monitor your progress along the way.

The initial phase of this program covers the following 4 courses:

  • Certificate III in Commercial Cookery — Apprenticeship

You will acquire the necessary skills and knowledge needed to operate as a trade cook in a commercial kitchen. You will learn how to produce quality foods, plan menus, control costs and work as part of a team in a hospitality environment. Practice skills will be developed for the hygienic preparation and service of a range of meals in a professional manner. The course also contains a range of elective units specific for various industry sectors.

  • Certificate IV in Commercial Cookery

This certificate is for qualified cooks and recognises prior learning and training. This course builds on your trade qualification and will develop your knowledge and understanding of hospitality management. You will gain an additional skills set encompassing human resources, customer service, finance and work health and safety practices, whilst exercising your own judgement and flair.

  • Certificate III in Hospitality (Apprenticeship — Front of House)

This competency-based pathway program provides entry-level practical skills and relevant theoretical knowledge in: providing service to customers, safe work practices , coaching, hygiene practises for food safety, introduction to food knowledge, food and beverage service, coffee and beverage knowledge. The course also contains a range of electives that will enhance your skill set.

Food and Beverage service course at William Angliss

This William Angliss Institute course is ideal for anyone wanting to gain valuable skills for use in the hospitality industry and suitable for job seekers. It is designed to instruct participants on the fundamentals of customer service within the food and beverage industry, enabling employees to deliver a superior, dining experience increasing customer satisfaction and encouraging pride in the workplace

The aim of the course is to:-

  • To implement a high level of consistent service.

  • To feel a greater sense of self achievement.

  • To identify glassware, cutlery and table settings as per the style of service.

  • To finesse food and drink carrying skills.

  • To have confidence in wine opening and know pouring levels.

  • To be familiar with front of house operations.

  • To have awareness of different customer attitudes.

  • To learn to have both teamwork and workplace respect.

The course covers various roles within a restaurant, bar or other hospitality environment. Participants will be guided through various skills including:-

  • Dining room preparation, mise en place

  • Knowledge of types of menus

  • Table settings with correctness.

  • Plate carrying with style.

  • Wine opening, pouring & drink tray service.

  • Napkin folding.

  • Restaurant order of service.

  • What customers expect.

On completion of the course, participants will receive a Certificate of Participation for Basic Food and Beverage Service.

The QTIC Tourism Indigenous Employment Champions Network, supported by The Star Entertainment Group, aims to support tourism employers to recruit and retain Indigenous employees. The Network is a group of volunteer tourism operators that have exhibited best practice in the recruitment and retention of Indigenous employment. Together with the Champions, QTIC have developed a range of resources for tourism operators, presented at numerous industry conferences, facilitated industry forums, provided tourism industry career path information to Indigenous students and job seekers, and identified Indigenous employment placements within the industry. Le Cordon Bleu launches its new partnership with North Metropolitan TAFE.

The newest Le Cordon Bleu Australia - Perth Institute launched with grand style on 27th April with an official ribbon cutting and plaque unveil. Premier of Western Australia and Minister for Tourism the Hon. Colin Barnett officiated the ceremony in the morning with speeches delivered by Derrick Casey COO of ‪#‎LeCordonBleu‬ Australia and Michelle Hoad interim GM North Metropolitan TAFE. 38875

Distinguished guests were treated to a morning tea catered for by North Metropolitan TAFE students on location at our newest classrooms purpose built for the two new Perth programs Bachelor of Business (Convention & ‪#‎EventManagement‬) and Bachelor of Business (‪#‎TourismManagement‬). The partnership between Le Cordon Bleu Australia and North Metropolitan TAFE (NMT) has been in planning for some time, and with exciting developments in Perth and an estimated increase in tourism anticipated for Western Australia these programs are timely in their release as the hospitality, convention and event and tourism need for trained employees grows.
