Apprentice Skills Pathways

Let us help ignite your career

Apply to be part of the Skills Pathways Program and we’ll find the right apprenticeship and training for you. We’ll match you with the right restaurant and registered training organisation. Importantly we’ll provide on-going support and a Skills Passport to monitor your progress along the way.

The initial phase of this program covers the following 4 courses:

  • Certificate III in Commercial Cookery — Apprenticeship

You will acquire the necessary skills and knowledge needed to operate as a trade cook in a commercial kitchen. You will learn how to produce quality foods, plan menus, control costs and work as part of a team in a hospitality environment. Practice skills will be developed for the hygienic preparation and service of a range of meals in a professional manner. The course also contains a range of elective units specific for various industry sectors.

  • Certificate IV in Commercial Cookery

This certificate is for qualified cooks and recognises prior learning and training. This course builds on your trade qualification and will develop your knowledge and understanding of hospitality management. You will gain an additional skills set encompassing human resources, customer service, finance and work health and safety practices, whilst exercising your own judgement and flair.

  • Certificate III in Hospitality (Apprenticeship — Front of House)

This competency-based pathway program provides entry-level practical skills and relevant theoretical knowledge in: providing service to customers, safe work practices , coaching, hygiene practises for food safety, introduction to food knowledge, food and beverage service, coffee and beverage knowledge. The course also contains a range of electives that will enhance your skill set.

Next Generation of Australian Chefs receive training of a lifetime at Noma Australia

Twenty-five Australian hospitality students will receive the ultimate training opportunity at world-renowned restaurant Noma Australia when it officially opens this week at Barangaroo, Sydney.

The Noma Australia Vocational Program, a partnership between Noma Australia, Restaurant & Catering Australia (R&CA) and the NSW Government, will provide students with on-the-job training and mentoring while they complete their Diploma in Hospitality.

R&CA CEO John Hart says the internship program will provide the ultimate training experience for young and mature-aged workers seeking to progress their career in the industry.

“The culinary skill and knowledge of René Redzepi and the Noma team is second to none. The Noma Australia Vocational Program will introduce Australian hospitality students to the best culinary minds this global industry has to offer. The program also exposes front-of-house students to the customer service expectations of the world’s finest restaurant.

“Knowledge sharing and up-skilling Australia’s next generation of chefs and restaurant professionals is necessary to grow our sector and promote future careers in hospitality. Too often the sector is seen as a stepping-stone on the way to an alternative career.

“Improving the employment prospects of trainees is a driving force behind the program, along with supporting recruitment tools such as the Discover Hospitality website. These tools connect apprentices and qualified staff with employers as they progress their career in hospitality,” Hart says.

Noma Australia, a collaboration with Lendlease and Tourism Australia, will run for ten weeks at what will become Sydney’s newest waterfront dining precinct, Barangaroo.

René Redzepi, founder and head chef of Noma, says the relocation of his restaurant to Barangaroo is an exciting opportunity to showcase the diverse culture and natural wonders of Australia, as well as to celebrate the country’s unique produce through an original and exclusive Noma Australia menu. To share our new gastronomic experiences with the next generation of industry professionals is truly exciting.”

Commercial Cooking and Hospitality: Looking Ahead in 2017

In the heavily subjective spaces of cookery and hospitality, riding the trends is as important as setting them. Let's look ahead to what's next.



S Pellegrino Young Chef 2016 - Leslie Hottiaux

Leslie Hottiaux from Apero Food & Wine, Auckland, New Zealand has been named as the winner following the Pacific regional final of S.Pellegrino Young Chef 2016 – the global talent search to find the best young chef in the world.Sanpellegrino_post_SPYC_PacificArea-1

Competing against nine other carefully selected young chefs from across the Pacific region at a Melbourne venue, Hottiaux took first place with her vegetarian dish of ‘Potato Gnocchi’ Mushrooms, Pine Nuts and Truffle.  “As my restaurant is all about meat, I wished to create something intrinsically vegetarian, in doing so I wanted the dish to be all about flavour and texture” she explained.

A local jury of renowned chefs, namelyPeter Gilmore, Peter Doyle, Jacques Reymond,Andrew McConnell and Adam D'Sylva were responsible for judging each of the ten semi-finalists signature dishes in line with the criteria set out under the five “Golden Rules”: ingredients, skills, genius, beauty and message.

Chef Hottiaux's thoughts are now with the next challenge that lies ahead, the Grand Final: “I’m thrilled to represent Australia Pacific in Milan. The Grand Final in October will be a great opportunity to meet and compete against other young chefs from all over the world."
